Organic Mate + Tea Blend for Kombucha
From Asia, to Africa, to South America, we searched the world to find the best Certified Organic teas for the kombucha home brewer and the commercial brewer alike. We import them directly, blend and package them in-house, and pass the savings along to you. This is our Organic Certified blend of Black, Green, and White teas for Kombucha, and it’s the same White tea we use in our working brewery everyday.
Our fanning blends are hands-down the best choice for kombucha for a few simple reasons:
1: More nutrition for a healthier scoby: fannings are the small particles of tea used in almost every tea-bag around the world, and when brewed, the surface area of fannings is exponentially more than the surface area of whole leaf tea. This means a much higher nutrient extraction rate, versus whole leaf, and (gram for gram) much more nutrition for your scoby than whole leaf tea.
2: Better flavor: more nutrients for the scoby means more kombucha goodness and better flavor in the end product.
3: Cost: fannings are much less expensive than whole leaf teas, with no loss in quality. While different general types of tea (white, black, green) can produce slightly different flavor profiles in finished kombucha, we’ve found no noticeable difference between expensive whole-leaf teas and fannings. This isn’t pinky-up tea with The Queen – it’s food for your a scoby – and fannings are what your scoby wants!

Taste:
Black tea maintains a rich, fragrant flavor profile with a mellow earthy finish.
Green tea is harvested when its antioxidant content is at its peak. A skip away from the savoriness of black tea, towards the vegetal, sweet, and grassy, the leaves are then minimally processed, resulting in tea leaves that are incredibly rich in powerful antioxidant polyphenols (plant chemicals).
White tea is a delicate, crisp white tea known for its neutral, nut-like character. Slightly savory, slightly sweet, slightly grassy — and a tea that produces a beautiful color in finished kombucha.
